I found this recipe on www.thereciperebel.com and my family loves it. We use almost the same recipe, my husband adds mushrooms to him and my daughter takes out the peppers, but I love it just the way it is.

Ingredients

  • bag of Little potatoes
  • medium onion
  • red bell pepper
  • canola oil
  • salt
  • dried parsley
  • black pepper
  • breakfast sausages (uncooked)
  • eggs
  • salt and pepper

Directions

  • Cut potatoes into quarters
  • Chop the onion and pepper into bite size pieces.
  • In a bowl combine the potatoes, onion, peppers, oil, salt, parsley and pepper.
  • Lay out four sheets of aluminum foil (we use heavy duty foil) and spray each with non stick spray.
  • Divide vegetable mixture between the four foil sheets and add two sausages to each.
  • Seal packs and place on direct heat. Cook for 15-18 minutes, or until the vegetables are tender.
  • When vegetables are tender, open packs and crack an egg into the center of each. Loosely tent the foil over the egg.
  • Cook for 3-5 minutes, or until desired doneness is reached.

You can add other vegetables and sausage you would like or make it a vegetarian meal and leave the sausage out. My sister has hers with just vegetables or vegan sausage.

S’mores

Smore's
Smores

This classic camping tradition is a hit with almost everyone. I personally don’t like marshmallows, so I just eat the graham cracker and chocolate. Now you can keep with tradition and just use Hershey’s chocolate bars, Marshmallows, and Graham Crackers. Or you can spice it up a bit and substitute the chocolate for so many others such as Reese’s peanut butter cups, Almond Joy, or Cookies and Cream Bars. You can also add things like coconut and Caramel to make Samoa Smores.

You can change the Graham Crackers as well to something else like Oreos, chocolate chip cookies, fudge strip cookies or chocolate graham crackers. Fruit can also be added as well, Apple slices with caramel, Strawberry slices, or sweet Jams. The combinations are endless.

Directions

  • Toast Marshmallow over fire to desired doneness.
  • Scrap Marshmallow onto cracker or cookie
  • Place on fixings such as chocolate or fruit
  • and end with another cracker or cookie on top

These are a big hit whether camping or just sitting around the fire in your own back yard.

Quesadillas

My family loves making their own Quesadillas. All you need are some tortillas, shredded cheese and aluminum foil. You can add some chicken or steak if you would like, but I would cook it ahead of time so all you have to do is sprinkle everything in the tortilla. These are so quick and are perfect for those fun days when you get camp to your camp site late from canoeing, fishing or hiking.

Ingredients

  • Flour Tortillas
  • Shredded Blended Cheeses
  • Cooked Chicken or Steak

Directions

  • Place chicken or steak on half the tortilla cheese over the chicken, or just cheese if you prefer.
  • Fold the tortilla to cover ingredients. Wrap the quesadilla leaving the ends open.
  • Place the foiled quesadilla on a grate directly over the campfire. Keep over fire till cheese is melted and tortilla is crispy.
  • Remove from the grate and cut into pieces. Also, you won’t need to waste plate, you can just use the aluminum foil!

There are so many options and you can please almost everyone!

  • Hot Dogs
  • Buns
  • Hot dog skewers
  • Your choice of toppings

Kabobs are another very simple meal that everyone can help with this one too. You can make it fun by creating an assembly line and pass your kabob from one person to another until they are full. You can use different meats and vegetables on your kabobs. Chicken and beef, pepper, onions, and mushrooms. Anything that will stay on the skewer. We like to get our meat from Rob’s Meat Chop & Deli. They have so many varieties of Meat chunks for your kabobs; Teriyaki Chicken or beef, Italian flavors, BBQ Flavors and they are all so good.

Ingredients

  • Skewers
  • Meat Chunks of your choice
  • Vegetables of your choice
  • Grate

Directions

  • Place Meat and Vegetables on skewers in whatever order you would like.
  • Place finished skewers on grate over fire for about 7-10 minutes turning frequently.
  • Lastly, Take your kabobs off when the meat is cooked through and vegetables are tender.

My sisters and I love fry bread. We usually eat them with buffalo burgers, which are fantastic! You can use them for sandwiches, burgers or open faced tacos.

Ingredients

  • 3 cups flour
  • ½ teaspoon salt
  • 3 teaspoons baking powder
  • ¾ cups milk
  • Extra water to make it come together
  • Vegetable oil for frying
  • Frying Pan

Directions

  • Combine the flour, salt and baking powder in resealable bag.
  • Add the milk to the dried goods mixture bag.
  • Knead with your hands (we do this on the outside of the bag – it’s less messy).
  • Add a little water to make sure it all comes together. Don’t over knead.
  • Let the mixture rest for 30-45 minutes.
  • After the dough has set, heat oil in a large frying pan over the fire.
  • Scoop out an orange sized piece of dough. Add a little extra flour if it is too sticky.
  • Press the dough flat to form a circle, stretching it a little as you go.
  • Add the dough circle to the frying pan and fry on one side until golden brown. Flip the bread to the other side, frying another 30 seconds or so.
  • Place fry bread onto a paper towel lined plate. Cook remaining dough in same fashion.

Omelet in a Bag

The kids will love making their own omelets in the morning. Just give them a plastic zip lock bag, a couple eggs, peppers, onions, ham, bacon or any other fixings for their omelet.

Ingredients

  1. eggs
  2. Diced Peppers
  3. Diced Onions
  4. Crumpled Bacon (Precooked)
  5. Diced Ham (Precooked)
  6. Shredded Cheese
  7. Seasonings
  8. Any other ingredients you like in your omelets
  9. Pot with water

Directions

  • Boil a large stock pot of water.
  • Mix the eggs in quart size Zip Lock heavy duty (freezer type) bag and smoosh it quite a bit to mix the eggs up.
  • Add in your choice of cheese, pre-cooked meat, vegetables and seasonings to the bag. Seal the top, removing as much air as possible, and mix everything by squishing the bag.
  • Place each bag, with the zipper side up, into the boiling water, and keep an eye on them. Reposition the bag if they sit too long against the side of the pot. They usually cook in about 10 minutes to be done, but depending on how many you are cooking and the size of the pot, it may take a little longer or shorter. Just watch them is all you need to do.
  • Enjoy!
